Wild garlic grows so easily in Ireland and can be easily foraged on a fun day out for a forest walk. We picked ours from Devil's Glen in Wicklow and found so much of it on the forrest floor.
The leaves have a fabulous garlic scent and are perfect for a heavy hitting pesto. Check out our recipe below, super easy and super delicious!
ingredients
two bunches of wild garlic
25g pine nuts
25g parmesan cheese
5 tbsp high quality olive oil
salt
squeeze of lemon
method
wash the wild garlic thoroughly by steeping in a large bowl of water and then draining & drying.
toast the pine nuts in a hot dry pan.
blitz the wild garlic, toasted pine nuts, parmesan & olive oil together in a blender.
season with salt and a squeeze of lemon juice.
serve with toasted sourdough bread.. or eat direct with a spoon! Yum!
